Happy Monday!! Are you getting excited for Turkey Day? It is just a few days away. I am excited because Nick will be home for the rest of the week starting on Wednesday night so we are planning on getting a lot of quality family time in.

I love the holidays. Especially the food (bet you saw that one coming). One holiday tradition I have never been fond of is Eggnog. I think the flavor is fantastic, I just can’t get around the texture. It’s thick. Far too thick. Nick on the other hand drinks a bottle a week. He absolutely loves the stuff. Which is why I decided to start experimenting with it.

This cake is unbelieveable! It is everything a holiday treat should be. Sweet and rich all at the same time. I am a cheater when it comes to baking. Taking time to measure 15 different ingredients and waiting for things to rise just isn’t my thing. I blame it on motherhood.

So I took the easy route with this cake and used good ol’ out of the box cake mix. But you wouldn’t know because the vanilla pudding, eggs and eggnog make this cake supremely moist. Cranberries are a signature holiday flavor so I added them in for fun.

Easy Cranberry EggNog Coffee Cake

Ingredients
  • Cranberry EggNog Coffee Cake:
  • 1 Box White Cake Mix (I used pillsbury)
  • 1 Box (3.9 ounces) Vanilla Pudding Mix
  • 4 Large Eggs
  • 1 Cup Eggnog
  • ¼ Cup Canola Oil
  • 1 Teaspoon Rum Extract
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoons Nutmeg
  • ½ Cup Dried Cranberries
  • 1 Tablespoon Orange Zest
  • Pecan Crumb Topping:
  • 1 Cup All-purpose Flour
  • 1 Cup Brown Sugar, firmly packed
  • 1 Cup Pecans, coarsely chopped
  • ½ Cup Oats
  • ½ Teaspoon Cinnamon
  • 8 Tablespoons Butter, softened
  • Eggnog Glaze:
  • 1 Cup Powdered Sugar
  • 1-3 Tablespoons Eggnog
Instructions
  1. Cranberry EggNog Coffee Cake:
  2. Preheat the oven to 350°. Grease a 9x13 baking pan with nonstick cooking spray.
  3. In a large bowl, combine the cake mix, pudding mix, eggs, eggnog, oil, both extracts, and nutmeg. Beat with a hand mixer on medium speed for about 2 minutes. Fold in the dried cranberries and orange zest. Top with crumb topping.
  4. Bake for 32-38 minutes. Cake is done when a toothpick comes out clean. While the cake is hot drizzle with Eggnog Glaze. Cut into squares and serve.
  5. Pecan Crumb Topping:
  6. In a bowl combine the flour, brown sugar, pecans pieces, cinnamon and butter. I just mix it all together with my hands until it resembles wet sand.
  7. Eggnog Glaze:
  8. In a bowl combine the powdered sugar adding 1-3 tablespoons of eggnog until the icing is thin enough to drizzle.
