I am a tart girl. Raspberries are my favorite fruit, I can’t live without greek yogurt and water without lemon just isn’t happening. Tart flavors just have a hold over me. So naturally I gravitate towards citrus fruits. Hence these Graham Streusel Key Lime Bars just had to be created.

They are so simple to make! I love the Key Lime Pie filling from America’s Test Kitchen so that is what I used here with just a few simple adjustments. I love how they spend days perfecting their recipes and take the guesswork out of baking. Ready for the best part about these bars? The filling is only 3 ingredients AND the crust is only 3 ingredients. This is simplicity at its finest!

These bars come out absolutely perfectly every single time. If you don’t have key limes, don’t worry about it. Plain limes work just as well! And the Graham Streusel topping is addicting, don’t say I didn’t warn you. 😉

Ingredients
  • Graham Cracker Crust:
  • 9 Whole Graham Crackers (I used Honey Maid)
  • 5 Tablespoons Butter, melted
  • 3 Tablespoons Brown Sugar
  • Key Lime Filling:
  • 4 Large Egg Yolks
  • 4 Teaspoons Lime Zest
  • 1 (14 oz.) Can Sweetened Condensed Milk
  • ½ Cup Freshly Squeezed Key Lime Juice (about 5-8 limes)
  • ¼ Cup White Chocolate Baking Bar, Melted for drizzling (optional)
  • Graham Cracker Streusel:
  • 3 Graham Crackers
  • 1 Tablespoon Sugar
  • ¼ Cup Brown Sugar
  • ⅛ Teaspoon Ground Cinnamon
  • 2 Tablespoons Butter, melted and cooled
  • 1 Teaspoon Vanilla
  • ⅛ Teaspoon Salt
Instructions
  1. Graham Cracker Crust:
  2. Heat the oven to 325°. Line a 9x9 baking pan with foil, leaving enough foil to hang over the edges for easy removal. In a food processor, ground up the graham crackers to fine crumbs. Drizzle in melted butter and brown sugar. Pulse until just combined. Press the mixture into the prepared pan. Bake for 14-16 minutes or until crust is lightly browned. Meanwhile, prepare filling.
  3. Key Lime Filling:
  4. In a mixing bowl, combine the egg yolk with the lime zest. Whisk constantly for 2 minutes. Whisk in the sweetened condensed milk until smooth. Add in the lime juice, mixing well. Set aside for 20 minutes to allow the mixture to thicken. Once thickened, pour the filling over the still warm graham cracker crust, top with streusel topping and bake for 15-20 minutes. Cool on a wire rack for one hour and then refrigerate for 3-4 hours. Drizzle with melted white chocolate if desired. Cut into squares and serve.
  5. Graham Cracker Streusel:
  6. In a food processor, combine all of the above ingredients. Pulse for about 30 seconds, or until the graham crackers are crushed but not fine crumbs. Add in the melted butter while the food processor is pulsing. Sprinkle on top of bars before baking.

These berry limeade bars are a puckery sweet treat. Sweet strawberries and tart raspberries make up the filling in this tangy lime bar with a shortbread crust.
