This Melon Ball Berry Salad with Lime Raspberry Dressing is the perfect summer treat. The dressing is fruity, sweet and a little bit tangy!
Summer is one of my very favorite seasons. Living in Southern California there is always sunshine and this month brings my favorite fruits. I am what you would call a fruit-aholic. In my dream world, fruit would be carb free and I would have an endless supply. Stella shares in my love of fruit too. She has been a little more finicky on the vegetable side of things so we have been making her big smoothies full of kale, spinach, and carrots all masked by the glorious flavor of fruit. She inhales them! To all the mama’s out there, if you are struggling to get your babies to eat their veggies make them a smoothie. They are magic.
You know what else is magic? Fruit salad. Mainly melon berry fruit salad with lime raspberry dressing. Who wouldn’t love a big, gorgeous fruit salad anytime of year…but in the summer the berries are a little sweeter and eating watermelon by the bowl full just feels right.
This salad is really easy to customize to your own taste. I used a combination of strawberries, raspberries, blueberries, grapes, cantaloupe, watermelon and kiwi. You can use whatever is in season. I used a melon baller to get those pretty round shaped watermelon and cantaloupe pieces. Melon ballers are really easy to use but they do take a little bit of practice. To get a perfectly rounded shape, cut your melon in half and then press the baller firmly into the flesh making sure that the melon touches the back of the scoop to avoid getting a flat surface. If you don’t have a melon baller, try using a rounded measuring spoon.
The dressing adds the perfect extra touch to the salad without overpowering the natural sweetness of the fruit. It is simple, a little lime juice, raspberry puree and honey.
I want this salad on repeat all summer long. And if someone has some carb-free fruit then I want that too. 😉
