I cannot believe how hot it was this weekend. The temperature got up to almost 103°! Basically the hottest weekend of summer. The heat makes me not want to do ANYTHING. Give me a cold drink and set me up next to the pool. Luckily, we have a pool and we spent most of the weekend lounging in the water or hiding inside with the air conditioning on full blast.
Which brings me to today’s review. I realize that you all have come to know me as a food blogger and that probably leads you to believe that I cook 24/7. But that just isn’t reality. I LOVE cooking. I really do. With blogging comes meal planning, huge grocery trips, recipe developing and testing…and the whole photography angle. It is a process that I have truly come to love. Sometimes this Mama just needs a break though.
So when Plated sent me a box of ready to cook meals last week, I was overjoyed! Plated is a subscription service that offers chef-designed recipes that come to your door all ready to go. Most of the ingredients are organic, pre-measured and most dinners are made in 45 minutes or less.
Plated is perfect for busy weeks when going grocery shopping and putting the guess work into planning meals is just too much.
We tried the Hawaiian Chicken and Pineapple Fajitas. They were amazing! Caramelized pineapple, sweet red onions, Asian Style Chicken served with tortillas and fresh cucumber salsa. The second meal was a Smoked Salmon Pasta with Snapped Peas in a creamy white wine sauce. Both were so good! They were very easy to throw together.
