I don’t know what it is about the holidays but we kinda go PIE crazy in my family. We usually have a group text going with all of my siblings and parents voting for which pies we will be getting for Thanksgiving and Christmas Dinner.

There are 6 kids in my family and everyone has a different pie preference. Which means that if everyone got their favorite pie, we would have 8 pies on Christmas day. Plus my older sister and I are now married so our husband’s have also joined in on the voting.

The pie votes range from Chocolate Cream or Banana Cream to classic flavors like Pecan and Pumpkin. I vote for the same pie every year, French Apple Pie. I love the tart apple slices, the brown sugar crumble, and the buttery crust. Of course, it wouldn’t be the same without a big scoop of Vanilla Bean Ice Cream all over the top.

The next day, we always have leftover pie for breakfast. I skip the ice cream on this round because I am a grown up…and grown ups don’t eat ice cream for breakfast. (They eat PIE). That brings us to today, Thanksgiving has passed and Christmas is still weeks away, so decided to make my version of French Apple Pie…except in lazy form bar form. 😉

Say hello to apple heaven. I started with my classic shortbread crust, total buttery goodness. The apple filling is simple. I used two kinds of apples. Granny Smith because I absolutely love their tart flavor but also because they are perfect for baking because they hold up well to the heat from baking. My second choice was Pink Lady Apples. They are a little sweeter but still have hints of tartness to complement the Granny Smith Apples.

Okay are you ready for my secret ingredient? It’s Smucker’s Salted Caramel Sauce. It tastes just like a homemade sauce and no one can ever tell the difference. The slightly salty bite is pure bliss on the tart apple layer. I love that it saves me so much time because it is ready to use right from the jar. After drizzling the caramel sauce over the apples, I top it all off with a simple Crumb mixture and voila dessert is ready. Well almost, you still gotta bake it. 40-45 minutes later you will be in Apple Pie Nirvana, or uhh Apple Bar. 😉

Tip: Use a mandoline to slice your apples. It makes the process go very quickly and all the apples end up with about the same thickness.

Ingredients
  • Shortbread Crust-
  • 1 ½ Cup All Purpose Flour
  • ½ Cup Cornstarch
  • 1 Cup Powdered Sugar
  • ½ Teaspoon Salt
  • 1 Cup Butter (2 Sticks), very cold and cut into small pieces
  • 1 Teaspoon Vanilla Extract
  • Caramel Apple Filling-
  • 2 Granny Smith Apples, peeled, cored and thinly sliced
  • 2 Pink Lady Apples, peeled, cored and thinly sliced
  • 4 Tablespoons All-Purpose Flour
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons Granulated Sugar
  • 2 Teaspoons Apple Pie Spice
  • ⅓ Cup Smuckers Salted Caramel
  • Crumb Topping:
  • 1 Cup All-purpose Flour
  • ⅔ Cup Brown Sugar, firmly packed
  • ⅓ Cup Granulated Sugar
  • ½ Cup Oats
  • ½ Teaspoon Cinnamon
  • 8 Tablespoons Butter, very cold and cut into small cubes
Instructions
  1. Shortbread Crust-
  2. Preheat the oven to 350°. Line a 9 x 13 pan with foil making sure that the foil overlaps the edges as this will help remove the bars from the pan. Spray with nonstick cooking spray. Set aside. In a medium sized bowl combine the flour, cornstarch, powdered sugar and salt.
  3. Using a pastry blender or two forks, cut in the cold butter pieces into the flour mixture. Add in the vanilla extract. Press the flour mixture into the prepared pan using your fingers to press firmly, forming an even layer. Bake for 22-25 minutes or until set but not golden brown. Meanwhile, prepare the caramel apple filling.
  4. Caramel Apple Filling-
  5. Place the sliced apple in a mixing bowl. In a separate bowl, combine the flour, brown sugar, granulated sugar and apple pie spice. Stir well. Toss the apples with the sugar mixture and set aside. Prepare crumb mixture (recipe below). Layer the apple mixture on top of the hot shortbread crust. Drizzle with Smuckers Salted Caramel Sauce. Top with crumb topping and bake for 40-45 minutes on 350°. Allow the bars to cool completely and then chill for at least 2 hours before cutting into bars. Drizzle with additional Salted Caramel before serving if desired.
  6. Crumb Topping:
  7. In a bowl combine the flour, brown sugar, sugar, oats, and cinnamon. Cut in the butter with a pastry cutter, two knives or your hands. I usually just mix it all together with my hands until it resembles a wet sand/ crumb mixture.

    Pie for breakfast is definitely a grown up thing in my opinion! It’s totally okay if it has fruit in it, right? 😉 These bars look absolutely delicious, Mariah! I love that salted caramel topping too.
