There is nothing better than a big, juicy summer peach. I absolutely love them! We live in Southern California and so summer runs a little longer here than in other parts of the country. So while everyone is talking about fall starting and the arrival of pumpkin season, I am still taking Stella for swims in the pool and eating watermelons by the bucket full (LITERALLY).

In honor of continuing on with the summer fun, I am sharing this fresh peach raspberry pie with you all. I love this recipe because it is so simple. Peach pie is a little difficult to make. One wouldn’t think so but peaches are extremely juicy and slightly unpredictable, so piling them into a pie and not getting a big soggy mess can seem impossible. There are methods to avoiding this but they are time consuming and not necessarily foolproof.

The first step to simplifying peach pie was eliminating the baking process. Fresh peaches are perfectly sweet and I love the texture. By not baking the peaches, they hold their shape and save a lot of time on my part. The next step is using a good quality, pre made glaze. You could always make your own from scratch but they have them all packaged up and ready to go in the produce section of your grocery store so why go through the trouble. I personally love Marie’s fresh glazes (I am not paid to say that, I truly love the product!). I have yet to find a glaze that I love more. I use their Strawberry Glaze in my Easy Strawberry Pie.

You can buy a premade crust or make your own. But keep in mind to roll out the dough a little thicker than you usually would so it can hold up to all the peaches. Before baking the crust, I brush a little egg wash over the top to seal the crust to keep any excess juices from seeping in. If you are looking for an excellent pie crust recipe, I recommend this one.

For easy, foolproof peeling boil a pot of hot water and place the peaches in it for 10-20 seconds. Immediately place the peaches into a bowl of ice water to stop the cooking process. After that just use a small pairing knife to peel the peaches, the skin should come right off.

If you have been reading this blog for any time at all, you know that I absolutely love raspberries. So I think they make the perfect addition to this pie. I had a little too much fun decorating. You really could do any design you like.

  • 1 (9 inch) Prebaked Pie Crust (homemade or store bought)
  • 4 Cups Peaches, peeled and sliced
  • 1 (14 oz.) Container Peach Glaze (I used Marie's)
  • ½ Cup Fresh Raspberries
  • Vanilla Ice Cream for serving (Optional)
Instructions
  1. In a bowl gently combine the sliced peaches with the peach glaze. Fold the peaches until well coated with the glaze. Fill the pie shell with the glazed peaches and refrigerate for 4 hours. Create a small space in the center of the pie and fill with the raspberries or create a design as I did above. Slice and serve with vanilla ice cream if desired.
Notes
For peaches, place peaches in boiling water for 20 seconds. Remove and immediately place in a bowl of ice water to stop the cooking process. With paring knife, peal the skin off the peach slices.

    Peaches and raspberries are such a great combo, I love them togethers. And this pie is absolutely beautiful!! So pretty, and I love that you didn’t bake the peaches. That’s a great idea, they ARE delicious and perfect without baking them!
