This skinny raspberry piña colada is filled with tropical flavors. Juicy pineapple, sweet coconut, tart red raspberries, and greek yogurt make up this yummy breakfast treat.
I came to the realization last week that there are a severe lack of smoothies on my site. You see, I am an avid smoothie lover. It is my breakfast of choice almost every morning. Back when first I met my husband, I think I ONLY had smoothie ingredients in my fridge. I love that they are quick, easy, and full of nutritious ingredients. I don’t think I’ve ever had a smoothie that I didn’t love.
When I first started making smoothies, the ingredients were strictly fruit. Then when I got pregnant, my husband became little more active in my dieting choices, which meant more protein for me. He was certain that his little line backer was gonna need 10,000,000 grams of protein every day so that meant my intake needed to go WAY up. Soon, we found out that his football star was actually a pretty little princess and we decided to take the whole protein thing to a compromise; I added protein rich greek yogurt and veggies to my smoothie. Everybody won. Turns out, Stella is a fruit-aholic just like mommy. I am not totally sure Nick’s strategy was all that effective, but she takes after him in just about every other way.
Today I have one of my favorite smoothies to share with you…and it’s veggie free (sorry Nick). This raspberry piña colada smoothie makes me feel like I am on an island somewhere tanning away these ghostly white legs. Unfortunately, I am not. But it is Friday and that is a beautiful thing, my friends.
Let’s talk raspberry goodness. I started using unsweetened coconut milk to take a break from my usual routine of almond milk. And let me just say, it really adds such a great flavor to smoothies. I always use unsweetened frozen fruit in my smoothies (I figure fruit is sweet enough). I used frozen raspberries, pineapple, and a banana for this tropical drink. Next up is non fat greek yogurt, which adds thickness and protein. I found a toasted coconut flavor of greek yogurt (made by Dannon). It only has 80 calories and 12 grams of protein, which I think is a good deal! I also added a little bit of rum extract to make it extra special.
This skinny raspberry piña colada smoothie has me wishing I was back in Cancun this weekend. Can someone pleasee make that happen?
- 1½ Cups Unsweetened Coconut Milk
- 1 Cup Greek Yogurt (I used Toasted Coconut Flavor from Dannon)
- ½ Cup Frozen Pineapple Chunks
- ½ Cup Frozen Raspberries
- 1 Banana, frozen and sliced
- 1 Tablespoon Shredded Coconut, unsweetened
- 1 Teaspoon Rum Extract (Optional)
- Combine all ingredients in a blender and blend until smooth. Serve immediately.
