I get excited. Are you thinking I am really weird?

I don’t know what it is about salads but I LOVE them! I will even go as far as to order a salad at a steak house. Is that a complete atrocity to all carnivores? (Given that it’s usually a big ol’ meaty salad…but a salad nonetheless).

I was looking over the blog and came to the realization that there is a complete lack of salads and that just would never do. I sincerely apologize. Can we still be friends? (Try this salad and I am sure all will be forgiven). Today I bring you a strawberry chicken salad filled with all the good stuff.

This salad is a perfect light spring dish to use up the influx of strawberries that are now readily available. I used grilled chicken but you could just as easily use shrimp or dare I say: go meatless (now carnivores really hate me).

My absolute favorite part of this whole salad deal is the crunchy component. I used candied pecans. Most of the time I make these at home but things have been particularly busy around here so I just used a bagged variety. You can find them in the produce section at the grocery store.

I had SO many extra strawberries that I decided to make a simple dressing with them to give this salad a little something extra. I could eat this dressing right out of the jar..it was a mouthful of some serious goodness. The balsamic gives it a little bite of tanginess while the strawberries were the perfect sweet touch.

Ingredients
  • Strawberry Chicken Salad:
  • 6 Cups Mixed Baby Greens
  • 2 Large Chicken Breasts, grilled and sliced
  • 1 Pint Strawberries, hulled and quartered
  • ½ Cup Blueberries
  • ¼ Cup Candied Pecans
  • ¼ Cup Goat Cheese, crumbled
  • Strawberry Balsamic Dressing:
  • 2 Tablespoons Honey
  • 2 Tablespoons Balsamic Vinegar
  • 4 Tablespoons Olive Oil
  • 1 Teaspoon Apple Cider Vinegar
  • 4 Large Strawberries, hulled and sliced
  • Salt and Pepper to taste
Instructions
  1. Strawberry Chicken Salad: In a large bowl mix baby greens, grilled chicken, strawberries and blueberries. Top with candied pecans and goat cheese crumbles. Toss with dressing of your choice. Serve immediately.
  2. Strawberry Balsamic Dressing:
  3. In a food processor or blender, mix together honey, balsamic vinegar, olive oil, apple cider vinegar and the strawberries. Blend until smooth. Add salt and pepper to taste.

    I am like you, I love salads too. In fact, I’m eating a salad for lunch right now! I love fruit and chicken salads. So excited that berries are in season so they’re not insanely expensive. This salad is just perfect Mariah : )
