Happy hump day! Did you all have a wonderful 3 day weekend? Monday’s are SOOO much better when they are spent lounging around and sipping margaritas! Good food and quality time with the people I love most in the world are the things that make magic in my world.

I definitely carb loaded this weekend. Chips and dip, alcohol, ice cream cake, and all the sweet treats I could get my hands on. So much so, that I thought Wednesday was feeling a little drab and was in desperate need of some more sugar. So I whipped up a cheesecake and had to share it all with you. Totally normal right? My husband has gotten used to the abnormal breakfasts I serve him. Sometimes its Jalapeño Poppers, sometimes it’s Cinnamon Milk and Cereal Cake. He just smiles and shovels it down. Did I marry a keeper or what?

Okay lets talk about cheesecake. Have you ever made one? Does the task seem a little daunting to you? Well I am here to tell you that is is SOOO easy! I have all the tips you need to know to make the perfect cheesecake with no cracking!

First off, start with all your ingredients at room temperature! This is such an important step to achieving a smooth cheesecake batter with no lumps. The trick is not to over mix the batter because if you whip too much air into the cheesecake, you increase your chances of it cracking.

Use a springform pan and bake the cheesecake in a water bath. Water baths are really easy. You just fill a roasting pan half full with hot water and place the cheesecake in it. However, you don’t want any of that water to leak into your precious cheesecake so here are two ways of protecting it. First off, you can wrap the spring form pan up the bottom and sides with a double layer of foil. Many people use this method and I have found that it works but sometimes water still manages to seep into the pan. The second method is to place your springform pan into a cake pan that is slightly larger than the springform pan (I use an 8 inch springform pan and a 10 inch cake pan).Then I place the cake pan directly into the water bath.

Do not open the oven during the baking process. You want your cheesecake to cook evenly and allowing the steam to escape will prevent that. So no peaking!!

Don’t over bake the cheesecake. You will know it is done when the center is just slightly jiggly. For best results, I allow my cheesecake too cool in the oven for an hour and then remove it.

For cutting cheesecake, I recommend using a very sharp knife that isn’t serrated. Heat up the blade by running it under hot water and dry immediately. Use a paper towel to wipe the cheesecake down in between each cut for truly perfect pictures.

This cheesecake really is our favorite. It makes the creamiest, thick cheesecake slices with the best blackberry swirls throughout and an amazing blackberry sauce all over the top. I hope all these tips help you make this ultimate double blackberry cheesecake a favorite in your family. 😉

  • Graham Cracker Crust:
  • 1¾ Cup Graham Cracker Crumbs
  • 4 Tablespoons Brown Sugar
  • ½ Teaspoon Salt
  • 8 Tablespoons Butter, melted
  • Blackberry Cheesecake:
  • 3 (8oz.) Boxes Cream Cheese, room temperature
  • 1 Cup Sugar
  • 4 Eggs, room temperature
  • 1 Tablespoon Vanilla Extract
  • ½ Teaspoon Salt
  • ½ Cup Heavy Cream,room temperature
  • 1 Tablespoon Butter, melted
  • ¼ Cup Blackberry Jam
  • Blackberry Topping:
  • 1 Cup Blackberries
  • ¾ Cup Blackberry Jam
  • 1 Tablespoon Lemon Juice
Instructions
  1. Graham Cracker Crust
  2. Preheat the oven to 325°. In a bowl combine the graham cracker crumbs, brown sugar and salt. Stir well. Add in melted butter and stir with a wooden spoon. The mixture should resemble wet sand. Press the graham cracker crust firmly into a 8 or 9 inch springform pan. Bake for 8-10 minutes or until lightly golden. Set aside to cool. After the crust has cooled, wrap the outside of the pan with two pieces of foil or alternatively you can place the springform pan directly into a 10 inch cake pan.
  3. Blackberry Cheesecake:
  4. Preheat the oven to 325°. In a bowl, beat the softened cream cheese with a hand mixer on medium speed for 2 minutes. Add in the sugar. Mix on medium speed for 2 minutes or until the sugar is all mixed in. Reduce speed to low, add in eggs one at a time.
  5. Beat for 1 minute or until well incorporated.
  6. Add in the vanilla, salt, and heavy cream. Brush the melted butter onto the insides of the springform pan.
  7. Pour the filling on top of the crust. Gently drop spoonfuls of blackberry jam on top of the cheesecake. Use a knife to make swirl patterns throughout the cheesecake by placing the knife half way through the cheesecake making swirls along the top.
  8. Set the springform pan in a roasting pan and place it in the oven on the center rack. Fill the roasted pan halfway up the sides of the springform pan with hot water. Bake for 1 hour. After the cheesecake is finished baking allow it to cool in the water bath by propping open the oven door. Cool for 1 hour. Remove the cheesecake from the oven. Run a sharp knife along the outsides of the cheesecake to loosen it. Place in in the refrigerator for 4-6 hours. Top with blackberry topping. Cut into wedges and serve.
  9. Blackberry Topping:
  10. In a bowl combine the blackberries, blackberry jam, and lemon juice. Mash up the blackberries lightly with a fork. Top the cheesecake with sauce.
Notes
Please note: Refrigeration time is 4-6 hours! For best results when cutting, use a sharp knife that has been run under hot water and wiped dry.

    Aren’t 3 day weekends the best?! Only if they came around more often and filled with good food, cocktails and family time! That would be the life. But I will take this cheesecake anyway…maybe after Baby K comes? Because we both know how he isn’t fond of sweets currently!
