Are you ready for the shocker here? The shake pictured above is not only dairy free, it is completely vegan. Thats right folks, this is what you would call a “Healthy Shake”. But if you tried it, I bet you would never know it. My little 1 year old sure didn’t and neither did her 16 year old dairy lovin’ uncle.

Wanna know my secrets to a killer dairy free shake?

Roasted Bananas: If you have never roasted bananas, you need to! It is the absolute best way to get a concentrated banana flavor with the perfect caramelized sweetness, without adding ANY sugar. Toss the bananas on a pan with the peel on and roast them for 15 minutes on 425°. Simple stuff.

Coconut Whipped Cream: It’s vegan. Its delicious. And it’s downright easy to make. It only takes two simple ingredients: full fat coconut cream and organic powdered sugar. A little splash of Vanilla Extract puts it over the top but is optional…sorta. 😉

The rest is easy. I use almond milk as the liquid but you can use coconut milk, soy milk, whatever you fancy. Almond milk is the lowest in calories so I usually just stick with that. When I think ahead, sometimes I freeze the bananas after I roast them for an extra thick shake. Finish off these pretty frozen treats with a generous dousing of caramel sauce. You can find vegan caramel sauce in the dessert/baking aisle of most health food stores.

Ingredients
  • Vanilla Bean Banana Caramel Shakes:
  • 2 Whole Bananas, unpeeled
  • 1 Cup Almond Milk
  • 1 Pint So Delicious® Dairy Free Coconut Vanilla Bean Frozen Dessert, slightly thawed
  • ¼ Cup Vegan Caramel Sauce, plus extra for drizzling
  • Coconut Whipped Cream for topping
  • Coconut Whipped Cream
  • 1 (14oz.) Can Full Fat Coconut Milk, chilled overnight in the fridge
  • ⅓ Cup Powdered Sugar
  • 1 Teaspoon Vanilla Extract
Instructions
  1. Vanilla Bean Banana Caramel Shakes:
  2. Heat oven to 425°. Place both bananas on an ungreased baking sheet and roast for 15 minutes. When finished, the bananas will be dark brown.
  3. Set the bananas aside to cool. For quicker cooling, you can place the bananas in the freezer.
  4. In a blender, combine the roasted Bananas, Almond Milk, Coconut Vanilla Bean Frozen Dessert, and the caramel sauce. Blend on high for 1-2 minutes or until smooth.
  5. Top with coconut whipped cream and drizzle with extra caramel if desired.
  6. Coconut Whipped Cream
  7. Open the can of chilled Coconut Milk and scoop out the firm, waxy layer on the top of the can into a mixing bowl. When you get to the watery layer in the can, stop scooping. You can reserve the water for smoothies, drinking etc. You only want to use the solid cream in the whipped cream. Using a hand mixer, whip the cream for 3-5 minutes on medium speed. Mix in the powdered sugar and vanilla extract. Top the prepared shake with the whipped cream, storing any leftovers in the fridge.
