Your Monday is about to get a whole lot brighter….because today we are talking about CAKE! I will be the first to admit that cake is not usually the first thing I grab on the dessert table but this is the cake to end all other cakes!

I have been making this recipe for every occasion possible! Stella’s birthday, Christmas, Easter, and maybe even just because it is Friday. If you have been reading my blog for any amount of time at all, you already know that my absolute love and devotion to dessert is all wrapped up in Raspberry and White Chocolate. That combination is just heavenly and I think all the world needs to experience it.

This cake is by far the BEST cake I have ever had. I have never brought it somewhere and had leftovers to bring home.

It is simple, delicious and you absolutely NEED to make it!

This recipe is simple. I am a purist when it comes to baked goods. Use good quality ingredients and you will truly taste the difference. That is why I was so excited when I stumbled across Pillsbury Purely Simple Cake Mix while I was shopping at Target last week. It contains no artificial flavors, colors or preservatives. Just yummy, dessert goodness!

I highly recommend using a good quality baking chocolate for this cake. It makes all the difference in the world. Here are a few tips for melting chocolate. If you are going to use a microwave use a glass bowl and make sure to lower your power settings by half. Microwave only in 30 second increments, stirring between each interval. Make sure that no water gets in the bowl or on the spoon that you use to stir the chocolate as any water will cause the chocolate to seize up and then you will have to start all over.

I think it would be a great disservice to not tell you about the frosting used on this cake. It is the most decadent Vanilla White Chocolate Cream Cheese frosting. I have played around a lot with the frosting and can finally say that I have gotten it to the perfect consistency. Fluffy, lump free and easy to spread. I have found that it is best to add the confectioners slowly, about 1 cup at a time. Start with room temperature butter and cream cheese. All the lumps must be beaten out before adding the additional sugar. This will make for perfectly smooth frosting.

If you have never made a layer cake, don’t be intimidated. It is so simple. I recommend using a bent icing knife. It makes spreading so easy. I use a piping bag with a round tip to pipe a border around the middle of the cake before filling so that the raspberry jam doesn’t ooze out. But if you spread the jam thinly, you shouldn’t have a problem!

Ingredients
  • White Chocolate Raspberry Cake:
  • 8 oz. Good Quality White Chocolate Bar, divided
  • ½ Cup Unsalted Butter
  • 1 Box (17 oz.) Pillsbury Purely Simple Vanilla Cake Mix
  • 3 Eggs
  • 1 Cup Buttermilk
  • 1½ Teaspoons Vanilla Extract
  • Filling and Garnish:
  • ½ Cup Seedless Raspberry Jam
  • ½ Cup Fresh Raspberries
  • White Chocolate Cream Cheese Frosting:
  • 1 Package Pillsbury Purely Simple Buttercream Frosting Mix
  • 1 Package (8 oz.) Cream Cheese, softened
  • 2 Teaspoons Vanilla Extract
  • 4 oz. Good Quality White Chocolate Bar, melted
  • 3 Cups Confectioners Sugar
Instructions
  1. White Chocolate Raspberry Cake:
  2. Preheat the oven to 350°. Lightly grease two 9 inch cake pans and set aside. In a glass bowl combine the butter and 6 oz. of the white chocolate bar (broken into small pieces). Microwave on medium power in 30 second intervals, stirring in between. Once melted, set aside to cool slightly. In a large mixing bowl, beat the cake mix, eggs, buttermilk and vanilla extract on medium speed with an electric mixer. With a rubber spatula fold in the white chocolate/butter mixture. Evenly pour the batter into the prepared cake pans and bake for 24-27 minutes. Let the cakes cool in the pans for 10-15 minutes on wire racks before removing. Run a knife around the edges and invert the cakes onto the wire racks to cool completely.
  3. White Chocolate Cream Cheese Frosting:
  4. Prepare the frosting mix according to the package. With an electric mixer, beat in the softened cream cheese on medium speed. Beat for 2-3 minutes until lump free and fluffy. Beat in the vanilla extract and melted white chocolate. Slowly add in the confectioners sugar, 1 cup at a time making sure that the sugar is fully combined before adding more. Beat until light and fluffy.
  5. Cake Assembly: Place 1 of the cakes, flat side up on a cake stand or serving plate. Spread a layer of frosting over the cake. Carefully spread the raspberry jam on top of the frosting, leaving about an inch around the cake. Carefully place the second layer of cake on top of the first. Spread the remaining frosting over the tops and side of the cake. Top with raspberries and remaining 2 oz. of white chocolate made into curls*.
  6. Note: To make chocolate curls, use a vegetable peeler to shave the edges of a bar of room-temperature chocolate. Refrigerate until ready to use.

    Wow, what a pretty cake! White chocolate and raspberry go together so well. It’s awesome that Pillsbury took a lot of junk out of these mixes! It’s always easier to use a mix sometimes, but I hate not knowing what kind of funky ingredients are in it. So this is perfect!

    Bahhhhh! I doubt you will see this in time, but what do I do if I can’t find the frosting mix???? I have the cake mix but my daughter’s birthday is tomorrow and I didn’t think it would be so hard to find the matching frosting mix….

      Hi Alison! So sorry I didn’t see your comment sooner! I hope you were able to find a frosting that worked out. If you can’t find the frosting mix in the future, you can substitute the frosting mix for 1/4 cup of butter. Cream the butter with the softened cream cheese first and then make the rest of the recipe as directed.
