I think you all have come to realize that I have a BIG thing for white chocolate paired with raspberries. I just shared these White Chocolate Raspberry Thumbprints last week. In the past I have shared White Chocolate Raspberry Cake and White Chocolate Raspberry Blondies and of course there were my favorite, White Chocolate Raspberry Pancakes….

But I think today’s recipe beats them all! Because it is all about the cheesecake, White Chocolate Raspberry Cheesecake that is. 😉

This is creamy goodness in every sense of the word. I love the buttery graham cracker crust, the delicate cheesecake layer and of course the big raspberry swirls.

Making cheesecake in bar form is really easy and the good news is that you don’t need a spring-form pan. These sweet treats bake up in a 9 x 13 pan.

Let’s talk cheesecake. I have made a lot of cheesecake in my time and used a lot of cream cheese but I have to say that nothing beats Kraft Philadelphia Cream Cheese. I guess I am not the only one who thinks that though because America’s Test Kitchen also voted them the #1 brand to use. One taste and it isn’t hard to see why. So my tip of the day, if you are going to make your own homemade cheesecake, buy the real cream cheese. You won’t regret it.

On to cheesecake goodness. This recipe is simple and I have tested it so many times. I have yet to ever have this recipe crack (fingers crossed). My secret for no cracking is putting a 9 x 13 pan half full of warm water on the bottom rack in the oven while the cheesecake bakes. It works like a charm!

  • Graham Cracker Crust:
  • 3 Cups Graham Cracker Crumbs (about 2 sleeves of Graham Crackers)
  • 10 Tablespoons Butter, Melted
  • 2 Tablespoons Brown Sugar
  • 1 Teaspoon Vanilla Extract
  • Cheesecake Filling-
  • 3 (8 oz. Each) Packages Kraft Philadelphia Cream Cheese, Softened
  • 1½ Cups Granulated Sugar
  • 1 Teaspoon Vanilla Extract
  • 4 Large Eggs
  • 4 oz White Chocolate, Melted and slightly cooled
  • ½ Cup Full Fat Greek Yogurt, vanilla or plain
  • Raspberry Swirls-
  • ⅓ Cup Raspberry Jam, seedless (or homemade raspberry sauce)
  • Optional: Fresh Raspberries and White Chocolate Curls for garnish
Instructions
  1. Graham Cracker Crust:
  2. Preheat the oven to 350°. Line a 9 x 13 pan with foil, leaving enough overhang over the sides of the pan to make removing the bars easy.
  3. In a bowl, combine the graham cracker crumbs, melted butter, brown sugar, and vanilla extract. The mixture should resemble wet sand. Press the mixture into the prepared pan and bake for 10 minutes. Meanwhile prepare the cheesecake filling.
  4. Cheesecake Filling-
  5. In a large mixing bowl, combine the cream cheese, sugar and vanilla extract. Beat with an electric mixer until fluffy, about 2-3 minutes. Add in the eggs, one at a time, mixing after each addition. Beat in the melted white chocolate and greek yogurt.
  6. Pour the cheesecake filling over the prebaked graham cracker crust. Drop spoonfuls of raspberry jam over the cheesecake filling. Use a knife to swirl the jam around the cheesecake in any design that you desire.
  7. Place a roasting pan or another 9x13 pan filled half full with water in the oven on the middle-lower rack. Place the cheesecake bars on the middle rack directly above.
  8. Bake for 55 minutes then turn off the oven and leave the oven door closed for an additional 10 minutes. Then prop open the oven door about halfway and allow the cheesecake to cool for another 20 minutes. Finally, remove from the oven and allow the cheesecake bars to cool completely. Refrigerate bars 2-4 hours before cutting into squares and serving.
  9. Optional: Top with fresh raspberries and white chocolate curls for garnish.
Notes
Note: Cheesecake bars need to be refrigerated 2-4 hours before cutting!
