Graham Cracker Streusel Apple Cake

  • Old Fashioned Apple Cake:
  • ½ Cup Canola Oil
  • ½ Cup Unsweetened Applesauce
  • 1 Cup Brown Sugar
  • 2 Eggs
  • 3 Cups All Purpose Flour
  • 2 Teaspoons Baking Soda
  • ½ Teaspoon Salt
  • 2 Teaspoons Cinnamon
  • ½ Teaspoon Nutmeg
  • ¾ Cup Buttermilk
  • 2½ Cups Granny Smith Apples, peeled, cored & diced
  • Vanilla Graham Cracker Streusel:
  • 1 Cup Brown Sugar
  • ½ Cup All Purpose Flour
  • 2 Graham Crackers, crushed
  • ½ Teaspoon Salt
  • ½ Teaspoon Vanilla Extract
  • 4 Tablespoons Butter, very cold and cut into small cubes
  • Maple Glaze:
  • 1 Cup Powdered Sugar
  • ½ Teaspoon Maple Extract
  • 1 Teaspoon Butter, melted
  • 2 Teaspoons Milk
  1. Old Fashioned Apple Cake:
  2. Preheat the oven to 350°. Grease a 9 x 13 pan with In a bowl, cream together the oil, applesauce, brown sugar and eggs. In a separate bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg. Add in the buttermilk to the dry mixture a third at a time, alternating with the wet ingredients. Do not overmix. With a rubber spatula, fold in the apples. Pour the batter into the prepared pan and top with vanilla graham cracker streusel. Bake for 50 minutes to an hour. Cake is done when a toothpick comes out clean. Optional: drizzle with glaze.
  3. Vanilla Graham Cracker Streusel: In a bowl, combine the brown sugar, flour, crushed graham crackers, salt and vanilla extract. Using a pastry cutter, cut the butter cubes into the flour mixture until very crumbly.
  4. Maple Glaze:
  5. In a bowl, whisk all the ingredients together until smooth. Drizzle over the cake directly after removing from the oven.
If preparing apples ahead of time, toss with a tablespoon of orange juice to keep the apples from browning.
