Why is there a serious lack of smoothies on my blog? I am a smoothie LOVERRR. It used to be in a food group all on its own. My life consisted of smoothies and fruit. Which if you really want to break that down, it would be fruit and more fruit. Every dang day. All year long. Someone finally educated me that fruit is just carbs. Ughhh. That was a painful day. What girl wants to hear that her giant bowl of healthy fruit is the equivalent of a big ol’ bowl of pasta? My heart was broken. I took a slight intermission from fruit. It was really hard folks.
BUT Stella has brought fruit smoothies back into my life in all of its wonderful, glorious ways and now breakfast has been quite the joyous occasion in our house. Nick makes us pack it with all the good stuff (kale, carrots & spinach) but I double the fruit to disguise the taste. It’s working because Stella loves them. But today I am sharing a Non Nick approved smoothie. My health loving husband just had to suck this one up this time around (Pun intended).
This smoothie is just like my favorite Lava Flow from our favorite smoothie shop. Even without the veggies, this smoothie is pretty healthy. I used frozen greek yogurt (yes that is a thing and it is AMAZING). Greek yogurt has protein, no fat and is fairly low in calories.
The secret to this smoothie is a little passion fruit juice and a couple drops of coconut extract. And frozen banana is a must! It gives the smoothies a thick consistency which I love! I make this drink for Stella all the time before we go to the gym in the morning and she loves it.
But she likes to sink her little teeth into something (she is like a little piranha now. Chewing with her newly emerged teeth is something still wondrous to her) so I have been making her these easy Foster Farms® Pancake Wraps. They are made with turkey sausage which is healthier than its pork counterpart. And I have to admit that these little wraps are pretty darn cute. I mean who wouldn’t want a pancake wrapped around turkey sausage. She looks at me real proudly because she can hold the stick all on her own. Her adorable little independant face kills me. I just throw them in the microwave and we are out the door which is really convenient. I used to think I would be that perfect mom who never let her kids eat in the car but a few of her protests and that changed real quick (There goes my parent of the year award).
I like to prep my smoothies the night before and pop them in the freezer that way I just need to pour in the liquid in the morning and blend. While the smoothie is blending, I microwave her pancake wrap and we are in the car with breakfast in hand in 5 minutes tops. You really can’t beat that. 😉 Foster Farms® Pancake Wraps are a new product and I found them at my local Wal-Mart. But take note that they aren’t in the breakfast section! They are over by the snacks and appetizers, right next to the corn dogs….maybe I should introduce Stella to those next (I can already hear Nick sighing.)
- ½ Cup Frozen Pineapple Chunks
- ½ Cup Frozen Strawberries
- 1 Frozen Banana
- ½ Cup Frozen Non Fat Vanilla Greek Yogurt
- 1 Cup Passionfruit Juice (or orange juice)
- ⅓ Cup Almond Milk
- 1 Teaspoon Coconut Extract
- Combine the pineapple, strawberries, banana, frozen greek yogurt, passionfruit juice, almond milk, and coconut extract in a blender. Blend until smooth, about 2 minutes.
