What is it about a corn muffin that makes it so hard to resist? They are one of my favorite comfort foods. I love the buttery texture and the sweet notes of honey…..Did I just say sweet notes of honey? Clearly, I am having a love affair with corn muffins. What can I say folks, I just really love food.

These Mini Jalapeno Cheddar Honey Corn Muffins are the perfect side dish! With just 3 ingredients and 5 minutes of prep time, you'll have these on the table in no time!

The humble corn muffin is a work of art all on its own but if you add jalapeno and sharp cheddar than it really becomes a thing of beauty.

I made these muffins mini because I have no self control. Or maybe it was because mini made them easier to shovel into my mouth all at once. I had some of these left over from dinner and so I packed them up and put them on the counter in a little tupperware container…but everytime I passed them I would reach my little hand in for another one! I would pass by the kitchen on the way to the laundry room, 1 more mini muffin. Stopping by the sink to get some water…just 1 more muffin. Little did I realize that Nick was stopping by stealing them too.

By the time morning arrived their were just 5 mini muffins left.

So to sum up my long rant. You need to make these muffins. You need to eat too many of them with dinner and then you need to finish off ALL the leftovers. Because it is Wednesday and you deserve a little treat!

Serves: 24 Mini Muffins or 12 Regular Sized Muffins
Ingredients
  • Jalapeno Corn Muffins:
  • 1 Box (16 oz.) Honey Cornbread Mix (I used Marie Callender's)
  • 1 (4 oz.) Can Diced Mild Jalapenos
  • 1 Cup Cheddar Cheese, shredded
Instructions
  1. Grease a mini muffin tin or regular muffin tin with cooking spray. Set aside. Mix the cornbread mix according to the package instructions. Fold in the diced jalapenos and shredded cheddar cheese. Pour the batter into the prepared muffin tin until ¾ of the way full. Bake 10 minutes for mini muffins or 15-20 minutes for regular muffins. Cool and serve.

    I can never resist mini foods, especially when corn bread is involved! These look amazing, Mariah! I love the jalapeno and cheddar combination. What a perfect little muffin to grab n go. These would definitely not last long in my house! Pinned!
