Hello Friday! And hello to you too! I have such a treat for you today…IF you are a caramel lover that is. If not, carry on folks!

But Caramel Lovers rejoice because I have made the most delicious Salted Caramel Almond Butter and it is only 3 ingredients! Yeah, you heard me right.

Have you had Cookie Butter before? It is basically the star of Trader Joes. This is essentially a healthy version of Cookie Butter.

All this goodness started when Blue Diamond Almonds sent me some of their Salted Caramel Almonds for me to experiment with. I had a really hard time deciding what to make (because I had SO many ideas!) and an even harder time keeping Nick out of them! They are so addicting!

You are not gonna believe how easy it is to make your own almond butter at home. All you need is almonds and a food processor. It takes a total of 10 minutes to make. Once you have that part down, the flavor combos are endless. I decided to use a little bit of cinnamon and a teaspoon of vanilla which gave this almond butter the perfect balance of sweetness.

If you like your almond butter crunchy, just chop up a few Blue Diamond Salted Caramel Almonds and stir them in.

I have been putting this stuff on everything! Bananas, bagels, rice cakes, and apples! I may or may not have been eating it right out of the jar! If you make only one thing this week, make this Salted Caramel Almond Butter! You won’t be disappointed!
