Nick and I had a pretty fast moving relationship.
Like reallyyyy fast. We were married within a year and a half of dating each other. But I wouldn’t change a thing about our love story.
Our first date was just at a local grill. We just met up for cocktails. It was all pretty casual. But I knew right then and there that there was something special about him. We talked until the place closed. I was a big bundle of nerves the whole time, fiddling with my bracelet and hoping I was saying all the right things. He played it cool, sipping on his Stella Artois and casually glancing over at the basketball game on the big screen. Turns out he was nervous too.
I couldn’t wait to see him again. So it wasn’t a big surprise that it was only 3 days later that we went on our first official dinner date. We both have a thing for Chinese food so we ended up at a beautiful Chinese Bistro by the beach. We agreed on everything from the appetizers to the entrees.
Sharing is a must for me. I want to try everything and having a significant other that doesn’t want to share food with me just wasn’t in the cards. Nick felt the same. We’ve been sharing ever since. I am always telling him what to order at restaurants just so I can have a few bites. He always humors me.
With our busy schedules we don’t make it to our favorite Chinese restaurant all that often anymore which is why I love picking up the P.F Chang’s Home Menu Line at the grocery store. They have all our favorites from Chicken Mini Egg Rolls to Shrimp Lo Mein. Yesterday just happened to be one of those busy nights so I whipped up some of P.F. Chang’s Frozen Home Menu Line Beef and Broccoli. I love it because you just toss it all into a skillet for 12 minutes, heat up some rice and voila dinner is served!
Nick loves it because we get to have our favorite Chinese food at home and I love it because there are basically no dishes to wash. As a food blogger, sometimes I REALLY need a break from dishes. I whipped up some ginger-lime simple syrup and made a Skinny Ginger Lime Soda to go with our easy dinner. They are so refreshing and are so much better for you than sugary sodas!

- 2 Tablespoons Grated Ginger (about a 3 inch Piece of Ginger Peeled)
- 1 Tablespoon Lime Zest
- ½ Cup Zero Calorie Sweetener (I used Truvia)
- 1 Cup Water
- ½ Cup Fresh Lime Juice (about 6-8 limes)
- 1 (1.25 Liter) Bottle Sparkling Water
- In a small pan, bring the grated ginger, lime zest, sweetener, and water to a boil. Once boiling, remove from heat and allow to cool for a few minutes. In a large serving pitcher, combine the slightly cooled ginger syrup, the lime juice and sparkling water. Serve immediately. Optional: Garnish with mint leaves.
