Hello beautiful December. I love that you are cold. I love that you bring the most wonderful time of the year. But most of all, I love all the delicious treats you usher in.
Thanksgiving came and went far too fast but I am still dreaming of French Apple Pie, Garlic and Herb Turkey, Spicy Sausage Stuffing and of course more Buttery Rolls than I could ever need. It was just plain glorious. Who wouldn’t love a holiday that is centered around food?
Unfortunately as time has gone on, my metabolism has slowed a bit. Those rolls find their way to my hips, where they serve as a constant reminder of my love of food. Could someone please tell me why they are called Love Handles anyway? Because you can rest assured that I have never found anyone who actually loved them.
But the food doesn’t stop at Thanksgiving. The whole month of December is a big whirlwind of parties with chocolates, cakes, dips and breads. Which is exactly why this sweet little Skinny Peppermint Milkshake was created. My sweet tooth just keeps on going despite the fact that the weekend is over. So say hello to my Skinny, 3 ingredient treat. Instead of using milk, I used Almond Breeze Unsweetened Almondmilk Cashewmilk Blend. It only has 25 calories per serving is lactose free, soy free, and calcium enriched. Basically all the good stuff.
Peppermint is a must during the holiday season so I just used a couple drops of Pure Peppermint Extract to get that minty flavor without all the calories. For the ice cream base, I used Frozen Vanilla Greek Yogurt. It is high in protein and low in sugar, a perfect substitute. If you are vegan, you could always use a cashew or coconut ice cream base as well. Top it all off with a little light whipped cream (or Coconut Whipped Cream) and you are all set for peppermint goodness, guilt free. 😉
- 2 Cups Frozen Vanilla Greek Yogurt (found in the ice cream section)
- 1 Cup Almond Breeze Almondmilk Cashewmilk Blend
- 1 Teaspoon Pure Peppermint Extract
- Optional: Whipped Cream and Crushed Peppermint Candies for garnish
- Blend the frozen greek yogurt, almond milk, and peppermint extract in a blender. Blend on high for 1-2 minutes. Garnish with whipped cream and crushed peppermint candies.
